Japchae - Stir-fried Glasss Noodles

[200310] Celebrated our monthsary at home by preparing a simple korean dish together! :D

Try it! Ingredients can be purchased at any korean marts.


150g (5oz) dried glass noodles (tangmyon)
1 tablespoon oil
1 tablespoon sesame oil
2 tablespoons soy sauce
3 cloves of garlic, minced
150g (5oz) beef sirloin, cut into thin strips
150g spinach leaves, trimmed
2 carrots, peeled and cut into matchsticks
2 spring onions, cut into short lengths
4 fresh shitake mushrooms, sliced
1 tablespoon sugar
1 tablespoon salt
1/2 teaspoon ground black pepper

* (a) For better results marinate the beef with Bulgogi (Marinated Barbecued Beef) sauce before cooking.
* (b) soy sauce and (c) sesame oil


1. Boil 1 liter (4 cups) of water in a large saucepan. Add the glass noodles and cook (3-5 minutes) until soft. Drain well and remove heat (use cold water).
 2. Heat oil in a nonstick wok and stir fry the garlic until golden brown. Add the beef, sesame oil and 1 tablespoon of the soy sauce and stir fry (1-2 minutes) until browned. Add the vegetables (spinach, carrots, mushroom, spring onion) and stir fry (3-4 minutes) until tender.
3. Add the glass noodles with sugar, salt and remaining soy sauce and toss well to combine. Cook for 2-3 minutes.
